Our Story
Born from the rich soils of Trinidad, SPIRITT is a premium dark chocolate experience crafted where the story begins. We blend tradition, terroir, and thoughtful innovation to create fine-flavour chocolate that honours its roots and excites the senses.
Backed by both The University of the West Indies and the Cocoa Research Centre, SPIRITT is built on a foundation of deep cocoa expertise and scientific credibility.
Each bar is made in small batches using sustainably sourced Trinitario cocoa beans, carefully fermented and finished at origin. Through pioneering work in cocoa fermentation, quality management, and traceability, we elevate the full expression of flavour from tree to bar.
The result? Single-origin dark chocolate that is rich in character, layered in taste, and rooted in place – crafted entirely in Trinidad, the land that gave birth to the world renowned Trinitario cocoa variety.
Why Trinitario Matters
Trinitario cocoa is a rare hybrid born in Trinidad, blending the strength of Forastero with the aromatic qualities of Criollo. It’s one of the world’s most prized cocoa varieties.
Fine flavour cocoa represents only 10-12% of the world’s cocoa supply—making it a rare and exceptional category. Within this exclusive segment, quality and flavour profiles vary widely. Our Trinitario cocoa stands at the very top, celebrated for its rich, complex taste and superior quality. When you choose our cocoa, you’re selecting the finest of the fine—crafted for those who truly appreciate the best.
The local Trinitario industry suffered a steep decline, plagued by dwindling investment, aging farms, and crumbling infrastructure. As a result, many farmers abandoned the sector, leading to a sharp drop in local production.
SPIRITT is working to restore the industry by producing premium dark chocolate locally, supporting farmers, rebuilding cocoa systems, and reviving Trinidad and Tobago’s role in the global chocolate scene.
